Lito Cubas runs El Plan, a coffee farm in Cutervo, Peru, named after its largest, flattest plot. Coming from a family of coffee producers, Lito learned traditional methods before returning from his studies to improve both the quality and value of his coffee.
With the help of a PECA educator, he refined his techniques, introducing new coffee varieties and better organisation. Lito’s process begins with careful cherry picking, followed by pulping and fermentation for 48 hours. After washing, the beans are dried in a solar dryer for 10 days to reach the perfect humidity. At El Plan, Lito combines tradition with innovation to create coffee that’s rich in both flavour and quality.
